Brian’s Vegan Journey: What You Need to Get Started

Note: This will largely be a list of items needed for plant-based meat and cheese creation. I will not really run down the basics such as fruits and vegetables. As I come across or develop recipes, I will add new lists with newly discovered ingredients. While this list is ever-changing and could not hope to cover everything you will need right away, or may contain things you will never use, it should put you on the right track at the grocery store. It should also allow you to have most everything you need should you get thrown a curve ball in a recipe.

Equipment:

  • Steamer pot
  • Food processor, hi-speed blender
  • Mortar and pestle

Ingredients:

  • Vital Wheat Gluten
  • Oat flour
  • Tapioca flour
  • Chickpea flour
  • Textured Vegetable Protein (TVP)
  • Coconut butter
  • Egg replacer
  • Xanthan gum
  • Young green jackfruit
  • Mushroom seasoning
  • Nutritional yeast
  • Black strap molasses
  • Methyl cellulose
  • Agar-agar
  • Kappa carrageenan
  • Liquid smoke
  • Paprika
  • Fennel seeds
  • Anise seeds
  • Garlic powder
  • Chili powder
  • Cashews
  • Flaxseed meal
  • Soy sauce
  • Beetroot powder
  • Vegan chicken broth
  • High-protein flour
  • Various vinegars

This list also includes items to make a mix that will flavor most anything like pepperoni. A lot of these items you may have to find online, such as the methyl cellulose, agar-agar and kappa carrageenan. If your grocery store has an app, download it to search for items; otherwise do it the old-school way and walk around the store. It helps you to familiarize yourself with where the vegan items are located and possibly discover something unique in the process, like items such as unique grains and proteins and especially meat and dairy substitutes.
