When my grandfather, Pietro D’Arcangelo, opened D’Arc’s Pizza in Windber, Pennsylvania, in 1960, he wasn’t trying to recreate a textbook regional slice from a recipe book. As an immigrant who spent years working in local coal mines, he adapted our family’s culinary heritage to the ingredients available in Western Pennsylvania. He and my grandmother cooked from the garden, growing produce like sweet and hot peppers, tomatoes, and fresh basil.
