“Mario Maruca and Nick Carlson, owners of Chula Vista-based Spinelli Catering — a mobile wood fire oven company offering on-site food service — served up a variety of homemade pizzas using fresh and organic ingredients at a session last Thursday. Some 25 students learned about the origins of pizza from Maruca, whose family is from Nocera Inferiore, a town outside Naples, Italy.”

“Students eagerly sampled and helped create the original Neapolitan pizza, sans cheese; a margherita pizza, named for Queen Margherita; and other Maruca creations using sausage, asparagus, roasted bell red peppers — also known as pepperonis – sautéed mushrooms, fresh mozzarella and imported Italian tomatoes.”
