Jim Henry, the acclaimed pizzaiolo behind JimmyHank Pizza in suburban Philadelphia, needed a spatula that would let him de-pan and “release the frico” for his Detroit-style pizzas with ease. So he invented one himself: the Frico King Spatula.

Now Henry is offering the tool to professional and at-home pizza chefs through Atlas Steel Company. After all, that crispy, caramelized frico edge is vital to the Detroit-style pizza experience; it should be preserved at all costs as the pie comes out of the pan. And Henry isn’t known as the Frico King for nothing. He has built an industry-wide reputation for the beautiful, sky-high, caramelized cheese crowns on his pizzas.

As Jim Mirabelli has reported on NEPA Pizza Review, Henry’s pizzas boast an “amazing light and airy crust with a crispy bottom and super-crispy caramelized cheese edge.” Mirabelli added that Henry’s pies were “among the very best Detroit pizzas I’ve tried.”

But finding the right spatula to preserve his pies’ frico edge was a challenge. “I wanted to create a spatula that would make it easy for anybody to get professional results at home,” Henry said. “With over a year in development, we have the perfect combination of edge bevel sharpness, ergonomic design and aesthetic.”

JimmyHank Pizza has once-a-month residency at Branch Creek Taphouse in Souderton, Pennsylvania. The pop-up business was “a passion project born out of the pandemic, which started with home baking, charity pop-ups and growing my social media following, and has evolved into a robust side hustle,” Henry said.
