Christopher Muller, PhD., is a Boston University professor and former owner of Za-Bistro! in Orlando, Florida. Muller says his up-scale pizzeria was a "highly successful failure" and he shares his views on running a competitive pizzeria with attendees at the New England Pizza Conference on May 10. Muller, currently Professor of the Practice, is a former BU dean, who says more than 40 years in the restaurant business has taught him that "disruptive innovation" is the No. 1 challenge facing today's operators.
