According to a news report from blastmagazine.com, “After testing the waters in Boston, Uno Chicago Grill is doing a national roll-out of a gluten-free pizza, making the singular restaurant formally called Pizzeria the first national casual dining chain to go the gluten-free route.”

“The move will be a big hit with the one percent of the world with Coeliac disease, a genetic autoimmune disorder of the small intestine caused by a reaction to gliadin, a gluten protein found in wheat,” said the story.
