SEATTLE, Wash.—(March 21, 2012) — All four Tutta Bella neighborhood locations—Columbia City, Wallingford (Stone Way), South Lake Union (Westlake) and Issaquah—  have a new menu (http://tuttabella.com/menu/). Building on the popularity of their thin-crust wood-fired pizza, the new southern Italian menu additions were meticulously researched by Tutta Bella’s Executive Chef Gojdics, together with Italian chefs at Academia Barilla, a renowned test kitchen located in Parma, Italy. The classic Vongole Pizza, ubiquitous in Italy but rarely found domestically, uses Manila clams in their shells, wood-fired directly on top of the pizza as it bakes; shells are removed as the pizza is eaten.

We’ve jumped with both feet into the Napoli heritage that inspires everything we do. Now, after all the care, patience and time we’ve devoted to this process, we’re unveiling our new dishes to our guests who’ll be happy to see we haven’t sacrificed their old favorites—just added new ones,” notes Gojdics. The handmade Neapolitan meatballs─polpette and mini-meatballs─polpettine, were developed from southern Italian recipes using a blend of beef, veal and pork.  These morsels are light, delectable and, above all, traditional. Over the course of several years and visits to Italy, Gojdics perfected an authentic lasagna recipe worthy of bringing back to Seattle’s neighborhoods.  Prepared fresh daily Lasagna Napoletana is available Mondays – Fridays 11 a.m. to 3 p.m.
