Tuscan Panzanella Salad
This salad’s name comes from the Italian “pane” (bread) and “zanelle” (the deep dish it’s served in). Popular in summer in the Tuscan region of Italy, it’s a fresh mix of bright vinaigrette, greens, vegetables, herbs and soft, rich tomatoes. The crusty bread cubes are the perfect way to soak up the dressing of sweet tomato juices, vinegar and olive oil.
