Washington D.C.-based &pizza has never shied away from stirring the pot when it comes to eyebrow-raising toppings. From cracked eggs on pies to elote sauce and corn to Thanksgiving leftovers, its culinary team likes to keep guests on their toes, and its newest limited-time pie, the Bacon Brussel, is a shining example.
You can call it a bold bet on brussels sprouts, but even misfit vegetables deserve a shot at a starring role.
Brussels sprouts very well could be one of the most polarizing toppings for a pizza since pineapple, but when they’re char-roasted and paired with crispy bacon and grilled onion, you’ve got an instant conversation starter, according to &pizza’s chefs.
The Bacon Brussel is baked with shredded mozzarella and a savory Parm-Romano sauce, then finished with a fig balsamic drizzle that ties everything together.
“Brussels sprouts do indeed have a bad rap, but their glow‑up as a go-to appetizer has been impossible to ignore,” said Joseph Fahey, &pizza’s culinary director and chef. “We wanted to give sprouts a spot on pizza and create a pie that stops people in their tracks—whether they’re longtime skeptics or just curious enough to take a bite.”
The Bacon Brussel Pie is priced at $12 and available now at all &pizza locations across the East Coast (New Jersey, Pennsylvania, Washington D.C., Maryland and Virginia). The company says it will soon enter Florida, Georgia, North Carolina and South Carolina.
