Ingredients:
2 T. oil
1 small garlic clove, minced
4 zucchini, sliced thin
1/3 c. onions, chopped
1 T. parsley, chopped
1 T. salt
1 tsp. pepper
1/8 T. oregano
1/4 T. rosemary
2 c. tomatoes, peeled and chopped
1/4 c. parmesan cheese, grated
Directions:
Heat oil in a large wok; add garlic and stir-fry for about 1 minute. Add zucchini, onions, parsley, rosemary and oregano; stir together, and add salt and pepper to taste.
Cover with a lid and cook over medium heat. Add tomatoes and cook for about 5 minutes. Put into a serving dish; sprinkle with cheese and serve.
