Pre-heat oven to 450 degrees. Add 1 T. oil to preheated skillet. When oil is hot, add diced sweet potatoes and onions; saute until seared. Add salt and pepper to taste; parsley and Italian seasoning. Remove from heat and set aside. Brush Thin Boboli crust with 1 T. olive oil.
Fill pizza crust with tomato sauce and cheese, leaving a 1 border. Top with sweet potato mixture. Bake for 8-10 minutes on a baking sheet in lower 1/3 of oven. Cool slightly and serve.
