Steak and Spinach Calzone


Serves 24.


1 lb. mozzarella cheese, shredded

1 lb. feta cheese, crumbled

8 c. spinach

2 T. fresh oregano, chopped

Salt and Pepper, as needed

9 lb. pizza dough, divided into 6-oz. portions

3 lb. flat iron steak, cut into 3/4" cubes and seared

6 c. red bell pepper strips

6 c. grilled red onions

Olive Oil, as needed


Mix together cheeses, spinach and oregano; season with salt and pepper. For each serving, to order, roll 1 portion of pizza dough into a 10" circle. Layer 2/3 c. cheese mixture, 2 oz. steak cubes, 1/4 c. red bell pepper strips and 1/4 c. grilled red onions on one half of circle.

Brush the edge of the dough with water; fold over to form a half-circle. Crimp the edge of the dough to seal. Brush the top with olive oil; bake in a 450F oven for 20 to 25 minutes or until browned.
