Roasted Mushroom Hummus


Roasted Mushrooms Ingredients:

8 oz. medium white mushrooms, sliced

8 oz. shiitake mushrooms, sliced

8 oz. portabella mushrooms, stemmed and sliced

8 oz. oyster mushrooms, sliced

4 oz. yellow onion, chopped

2 oz. garlic, chopped

2 oz. olive oil

1 tsp. kosher salt

1/2 tsp. cracked black pepper


Toss all ingredients together. Place on a sheet pan; do not crowd the product. Roast at 400F until brown and tender, about 10 to 15 minutes, stirring once.

Hummus Ingredients:

1 can garbanzo beans (14 oz)

1/2 c. tahini (sesame seed paste)

1 T. chopped garlic

Juice of 1 lemon

1/2 c. olive oil

1/2 c. roasted red peppers

2 c. roasted mushrooms (recipe above)

Toasted pita bread chips, as needed


In a food processor, combine garbanzo beans, tahini paste, garmic, lemon juice, olive oil, roasted red peppers and 2 c. of the roasted mushroom mixture. Spoon into bowl; top with remaining mushrooms and additional red peppers, if desired.

Serve with toasted pita bread chips.
