Pesce y Pomodoro Bruschetta


Makes 35 appetizers


1 baguette, sliced 1/4 inch thick and toasted with olive oil

2 large cloves garlic

1/2 tsp. salt

3 c. Roma tomatoes, finely chopped, seeds removed (or 1 14-oz. can petite diced tomatoes)

1/4 c. shredded Parmesan cheese

2 T. extra-virgin olive oil

1/2 tsp. sugar

1/4 tsp. pepper

1 c. cream cheese with herbs

6 oz can tuna in olive oil

Parsley for garnish


In medium bowl, mash garlic and salt into a paste. Add all remaining ingredients except cream cheese, tuna and parsley; blend well. Spread about 1/2 tsp. cream cheese with herbs on each baguette slice; top with bruschetta mixture. Flake pieces of tuna over mixture. Garnish each bruschetta with parsley leaf. Serve immediately.
