Marble Cheesecake Squares



24 cream filled chocolate sandwich cookies, finely chopped (2 cups)
3 T. butter
1 c. sugar
2-8 oz. packages cream cheese, softened
1-16 oz. package Crave Brothers Farmstead Classics-Mascarpone
1 tsp. vanilla
4 eggs
1 c. sour cream
1 square semi-sweet baking chocolate, melted


Preheat oven to 350.  Place chopped cookies in a 1 quart bowl.  Microwave butter until melted, add to crushed cookies and mix well.  Press crumb mixture in a 15 x 10 x 1 pan (jelly roll pan.) 

In a 2 quart bowl beat cream cheese, mascarpone, sugar and vanilla until well blended.  Add eggs, one at a time, mixing well after each addition.  Stir in sour cream until well blended.  Place batter in a small bowl.  Stir in melted chocolate; set aside.  Pour remaining batter over crust, carefully spreading to edges of pan.  Place chocolate mixture in a decorator bag fitted with a tip.  Pipe chocolate batter in 5 lengthwise stripes equal distance apart on top of batter.  Take a knife and cut crosswise through chocolate several times for marble effect. 

Bake 20 minutes or until set.  Cool bars to room temperature and cut into squares.  Refrigerate.
