Lamb Delight



  • 175 g Lamb fillet
  • 2 tsp Crushed garlic
  • 100 ml White wine
  • 10 Button mushrooms char grilled
  • 75 g Roasted pumpkin
  • 40 g Pistachios crushed
  • 1 sprig Rosemary finely chopped
  • 1 stick Sliced shallots (scallions)
  • 275 g Pizza dough
  • 120 ml Pizza sauce
  • 110 g Caboolture Pizza Cheese

Cut lamb into 8 even strips, toss in garlic and white wine and refrigerate overnight in airtight container. Roll out pizza dough into a 25 cm lightly greased pizza tray. Spread pizza sauce and Caboolture cheese evenly over dough base. Arrange lamb, mushrooms and pumpkin onto base and top with pistachios, rosemary and shallots. Bake at 475 celsius for 7-8 minutes
