10 oz. Alfredo sauce, prepared
1/4 tsp red pepper flakes
5 8-inch flour tortillas
2 T. olive oil
4 oz.Premero hand-pinched style old Italy Italian Sausage, 24216.
4 oz. grated mozzarella cheese
1/2 c. diced tomato
1/4 c. drained, sliced black olives
In a small sauce pan, combine Alfredo sauce and red pepper flakes. Warm over low heat, stirring occasionally to prevent burning. Cover to keep warm while preparing remaining ingredients.
In a hot skiller, heat small amount of oil and lightly brown tortillas, one at a time, on both sides. Add approximately 1 tsp. oil to pan for each tortilla. Lightly salt the tortillas after browning. Cut tortillas into eighths.
Place half of tortilla pieces on oven proof platter. Pour 1/2 Alfredo sauce mixture over tortilla pieces; then top with remaining tortillas.
Layer with remaining Alfredo sauce, tomatoes, sausage, cheese and black olives. Place in preheated 400F oven for 8-10 minutes or until cheese is bubbly, but not browned.
Chef Note: Tortilla chips can be used as a replacement for pan fried tortillas.
