1 clove garlic, minced
2 c. ripe tomatoes, chopped
1/4 c. onion, chopped
1 T. fresh basil, chopped
1/2 T. fresh oregano, chopped
1 tsp. black pepper
2 T. heavy cream
2 T. Parmesan Cheese, grated
4 slices hearty country bread
Toppings: Pepperoni, bacon, mushrooms, onion, bell pepper, tomatoes, fresh basil, or other desired ingredients (optional)
4 oz. fresh mozzarella cheese, sliced
1 c. mozzarella cheese, shredded
Drop the garlic clove into a food processor or blender while it's running. Turn off the processor and add tomatoes, onion, basil, oregano and pepper; puree. Pour the sauce into a medium saucepan and heat to boiling over medium-high heat. Reduce heat and simmer 8 to 10 minutes, uncovered.
Stir in cream and Parmesan; simmer for 2 minutes, until thick.
Spread sauce on one side of each slice of bread, then top with desired ingredients, sliced fresh mozzarella and 1/4 c. shredded mozzarella. Cook face-up on a grill or place under the broiler, until cheese is melted. Serve immediately.
