- 2 4-oz cans whole green chilies
- 2 c. Monterey jack cheese, grated
- 2 c. cheddar cheese, grated
- 6 eggs, beaten
- Salt and pepper to taste
Preheat oven to 325.
Butter an 8 or 9 square baking dish. Slice and open chilies and arrange on bottom of baking dish. Mix grated cheese together and sprinkle over chilies. Bake 30 to 40 minutes, or until firm when dish is shaken. Cut into squares and serve hot.
Makes 20 squares.
