Grease a 10" deep-dish pizza pan with nonhydrogenated shortening. Press a 10 oz. dough ball into the greased pan, cover and proof in a warm place for 2 to 3 hours. After proofing, invert proofed dough circle onto a greased 12" pan.
Elongate dough circle into a rectangle by pulling at the ends. Using a pair of scissors, cut as desired.
Dress with your favorite toppings, such as bacon, onions or black olives, and bake for 5 to 6 minutes at 465F.
Serve with seasoned dipping oils if desired.
