3 T. onion, chopped
1 T. butter
3 T. parsley, chopped
1 1/2 lbs ground Maple Leaf Farms Fresh Duck Legs, with fat
2 T. grated Parmesan cheese
1 pinch nutmeg
1 pinch cardamom
1-1 1/2 c. high quality bread crumbs
Salt and freshly ground pepper, to taste
1. Saute onions in butter until translucent. Add parsley, remove from heat and set aside. Chill.
2. Once chilled, combine onion mixture with the rest of the ingredients, adding the breadcrumbs slowly. Continue to add breadcrumbs until the mixture is firm (You may not need 1 1/2 cups worth). Salt and pepper to taste. Place in refrigerator until needed.
Pasta Dough Ingredients:
4 c. all-purpose flour
4 eggs, lightly beaten
2 egg yolks
1 T. + 1 tsp. vegetable oil
1 T. + 1 tsp. salt
Place the flour in a mixing bowl. In a separate bowl add the 4 eggs, egg yolks, oil and salt; whisk well. Add the whisked ingredients to flour.
