• 275 g Pizza dough
  • 2 Large bananas
  • 30 g Crushed raw macadamias
  • 20 g Brown sugar
  • Pastry cream (to serve)
  • Caramel sauce (to serve)
  • 1 scoop Vanilla bean gelato
Pastry Cream:
  • 2 Eggs
  • 65 g Castor sugar
  • 1 ml Vanilla essence
  • 250 ml Milk
  • 30 g Plain Flour


Roll out pizza dough into a 25 cm lightly greased pizza tray. Spread pastry cream evenly over pizza base. Slice bananas and arrange onto base, sprinkle with macadamias and brown sugar. Bake at 475? F for 7-8 minutes. Once cooked, drizzle with caramel sauce and top with vanilla bean gelato.

Pastry Cream:
Combine cream, egg yolks, sugar and vanilla. Brink milk to boil and whisk in egg mixture. Whisk in flour. Place mixture into clean saucepan and return to low heat. Slowly cook, stirring until coats back of spoon.
