Caramelized Onion Quesadillas



  • 1 T. olive oil
  • 1 medium red onion, thinly sliced
  • 4 green onions, sliced
  • 2 cloves garlic, chopped
  • 1 tsp. ground cumin
  • 1/4tsp. dried oregano leaves
  • 1 T. lime juice
  • 4 large (10-inch) tortillas
  • 2 c.reduced-fat shredded cheese(combination of cheddar, jalapeno,
  • Monterey jack or other spicy cheese)
  • Optional: salsa, guacamole and sourcream

Preheat oven to 400F Heatoil in skillet over medium heat andsaute onion and garlic until softened,stirring occasionally about 10minutes. Stir in cumin and oregano.

Remove from heat and stir in limejuice. Place 2 tortillas on a bakingsheet and spread the onion mixtureequally on the two. Sprinkle with equalamounts of cheese. Top withremaining tortillas and bake at 400 Ffor about 8 minutes until the edgesare golden. Let stand 5 minutes andcut each into sixths with a pizza
cutter. Garnish with salsa, guacamoleand sour cream if desired.
