Berry Bruschetta with Walnut-Mint Pesto



12 French baguette slices 

1 c. baby spinach, loosely packed, rinsed and patted dry

¼ c. fresh mint leaves, rinsed, patted dry and torn

3 T. walnuts, toasted and chopped

2 T. olive oil

1 T. balsamic vinegar 

1 whole lemon peel, grated 

4 oz. reduced-fat cream cheese or creamy goat cheese 

36 strawberry slices, partially thawed


Place baguette slices on a baking sheet and toast at 400ºF for 8 to 10 minutes, or until crisp; cool. Combine spinach, mint, walnuts, oil, vinegar and lemon peel in a food processor. Pulse until mixture is finely chopped (not smooth). Spread cheese on each baguette slice. Spoon on pesto, dividing equally between baguette slices. Top each baguette piece with 3 strawberry slices.
