Butter, for greasing pan
2 red apples, peeled and cored
2.5 c. granulated sugar
2 T. white wine
1 loaf Italian bread
11/4 c. light cream
1 orange peel, cut into thin slices
Lightly grease a 2" deep pan with butter. Slice the apples into rings and line the bottom of the dish with them. Sprinkle half the sugar on top. Pour the wine over the apples. Remove the crust from the Italian bread and take out the middle. Press the middle of the bread together and flatten it out in top of the mixture in the pan, covering the entire contents.
Beat the eggs and add to the bowl the cream, remaining sugar and orange peel. Pour this over the ingredients in the pan and let soak for about 30 minutes. Preheat the oven to 350F and bake for 25 minutes or until golden brown. Serve warm.
