“The enthusiasm for pizza in Asia is driving up the price of cheese on the domestic front. In Central New York, local pizzeria owners say the increase in the price of cheese is taking a slice out of their profits. Mario & Salvo’s Pizzeria in DeWitt, for example, has not changed the price of its pizza in years. ‘We’ve absorbed for three years, but we finally decided it’s time to give it a little bump,’ said owner Gus Dimarco. While gas prices have increased, the cost of doing business has been rising. Now, with the increase in cheese demand, owners like Dimarco say they can no longer profit with the prices they’ve tried to keep.”
