Mellow Mushroom—the Atlanta-based, stone-baked pizza brand with more than 160 locations nationwide—has unveiled a new chapter in its evolution as a brand evolution with the opening of a next-generation prototype along Atlanta’s Beltline. The Grant Park location introduces updates in design, technology, and menu innovation—all with an eye toward enhancing the guest experience.

One of the most buzzworthy additions? A brand-new menu category: Panizzis.

Exclusive to the Grant Park location, Panizzis are a creative mash-up of pizza and panini. These melty, handheld creations are built on Mellow Mushroom’s signature pizza dough and stacked with premium cheeses, bold flavors, meats, and fresh vegetables.

Panizzi menu highlights include:

  • Chicken Pesto Panizzi – Chicken, mozzarella, parmesan, garlic ricotta, roasted tomatoes, tangy peppers, garlic, arugula, pesto and olive oil
  • Steez Steak Panizzi – Steak, provolone, spicy pickled peppers, garlic ricotta and grilled veggies
  • Mega Meatball Panizzi – Beef and chicken meatballs, pepperoni, provolone, mozzarella, parmesan, arugula, pesto and Mellow red sauce
  • Shroomin’ Panizzi – Roasted mushroom trio, white cheddar, mozzarella, parmesan, garlic ricotta, caramelized onions, arugula, and truffle oil

According to a press release, the launch of Panizzis is “one way Mellow Mushroom is celebrating nearly 50 years of quirky, community-driven pizza culture and forward-thinking innovation. This prototype location serves as a testing ground for what’s next—offering a glimpse into the future of the brand’s design, technology integration, and culinary creativity.”
