"It was not easy for Fat Cat Pizza owner Krista Blankenship to watch a fire destroy her 1448 Ety Road location in 2011," according to the Lancaster Eagle Gazette.
"It was a little tough, let me tell you," she said. "But you make do and you keep your head up until things get better."
Things are definitely getting better now, as Blankenship and her husband, Ronnie, plan to reopen the business during the first or second week of August.
The fire started just after 9 a.m. Oct. 22 and destroyed the roof and interior of the building, sparing only the kitchen. It burned for about two hours."
