“Ten years ago, business partners Kelly Edmonds and Don Scott were trying to brainstorm a profitable business in a failing, post 9/11 economy,” according to the Spring Observer.

“Edmonds had worked in pizza delivery years ago, she said, and so when a small pizza joint called Pizza Tonight went up for sale on Rayford Road, the pair jumped on it.

A decade later, Edmonds said they’re more than a little surprised that Donelly’s Pizza Bistro (a mash up of Don and Kelly’s names) is still standing and now a fixture in the Spring area.

“We’re very proud of what we’ve done here,” Edmonds said. “We’ve gotten through the recession, even as other pizza places have popped up all around us, there’s a Double Dave’s, a Gatti’s right here and a ton more options across the freeway … we’ve kept it coming because we take care of our customers.”
