Fresh ingredients, handmade mozzarella, ‘secret recipe’ dough and pizza sauce also add to their award-winning formula. ‘The ‘secret recipe’ dough is actually not a secret,” said Amy Fletcher, director of marketing for Bell Tower Shops. ‘It’s all in the water.’ Grimaldi’s has developed a unique system to recreate the exact water used in their Brooklyn location, pumping it into each restaurant to guarantee the dough tastes the same in New York as it does in Fort Myers. Along with hand-tossed pizzas, calzones, fresh salads and desserts, the Grimaldi’s bar will serve an extensive selection of beer and wine.”
