Grilled Chicken Chipotle Sandwich

Makes 1 serving

 

1 (6-ounce) boneless skinless chicken breast

1 small red onion cut into ¼-inch thick rings

Salt and pepper

1/4 cup Mrs. Clark’s Chipotle Chile Light Mayonnaise

2 tablespoons fresh lime juice

1 teaspoon chopped fresh cilantro

¼ ripe avocado, peeled and sliced

1 hamburger bun, toasted

 

Preheat grill. Sprinkle chicken breast and onion rings with salt and black pepper. Grill chicken and onions until thermometer in thickest part of breast reaches 165°F. and onion is seared on both sides.

Meanwhile, in small bowl, combine mayonnaise, lime juice and cilantro. Spread even layer of mayonnaise on both sides of toasted bun. Place chicken on bottom of bun, top with grilled red onion and avocado slices. Serve with lettuce and tomato slices.
