The award-winning, Cavalli Pizzeria Napoletana received the Associazone Pizzaiuoli Napoletani (APN) certification in June 2014. World-renowned Chef, Master Pizzaiolo and President of American Chapter APN Roberto Caporuscio, oversaw the pizza makers of Cavalli Pizzeria to meet the strict certification guidelines of the APN and certified Paolo Cavalli, Michela Cavalli and Sergei Bruce.
“Since we opened our doors in 2007, our team at Cavalli has strived to keep the integrity of our product by delivering traditional, Neapolitan Pizza to our guests,” says Paolo Cavalli, Chef/Owner at Cavalli Pizzeria Napoletana. “In pursuit to continue this tradition, we are thrilled to take the next step by individually certifying our pizzaiolos through APN. It is our guarantee that at least one of our newly certified pizzaiolos will always be onsite to ensure the integrity of our product. Our ultimate goal is to have every single pizzaiolo in our restaurants certified by the APN and we are currently working towards that goal.”
Throughout the APN certification process, Caporuscio discussed the high standards and specification to a quintessential Neopolitan-style pizza from dough creation to cooking the pie after sprinkling the necessary toppings. Cavalli staff and guests crowded around Caporuscio to understand the mastery behind perfecting burrata, mozzarella and other classic Italian cheeses.
Cavalli recently rolled out a new Sunday Brunch menu, which includes Cavalli Eggs Benedict, Lobster Baked Ziti and Homemade Burrata. In addition, to a new Sunday Brunch menu, Paolo Cavalli is thrilled to announce new dishes in coming weeks. The McKinney establishment underwent renovations, which include modifications to an expanded patio with a comfortable lounge area, ideal for enjoying live entertainment, refreshing cocktails and Italian cuisine.

Cavalli’s full service establishment in McKinney serves authentic Neapolitan-style pizza, tapas-style dishes and snacks, antipasti and salads, wood-fired sandwiches and dessert pizza. With many mouthwatering recipes, the Arancini and Fresh Caprese Salad are one of the Cavalli favorites. Another favorite includes the classic Margherita pizza, which consists of fresh mozzarella, San Marzano tomato sauce, basil and olive oil.
