40 North’s Clint Elmore collaborated with La Barbecue’s LeAnn Mueller and Ali Clem to create the Spicy Pickle Pizza, which will be offered at 40 North through Jan. 31. The team created a total of three new signature pizzas and rolled them all out at a special event, held at 40 North, that raised funds for Austin Pets Alive Wednesday night.
The meat-free Spicy Pickle Pizza features La Barbecue’s housemade pickles, mozzarella, fontina, Parmesan, pickled garlic, Fresno chili peppers, and dill.
The other new pizzas include the Pulled Pork Calzone, featuring pulled pork, mozzarella, Parmesan, garlic, Fresno chili peppers, pickled red onions, and barbecue sauce, and the Sausage Pizza, topped with regular and chipotle sausages, mozzarella, taleggio, roasted fennel, charred scallions, pickled jalapenos, and fennel fronds.
Rhino’s Pizzeria, with stores in Webster and Rochester, New York, tickled pickle fans in September with its Big Dill pie, which was topped almost entirely with pickles. Parrino’s Pizza in Sydney, Australia, followed suit in October with the Mr. Pickle Pizza.
