Mellow Mushroom, with 160-plus locations nationwide, turns 52 this year, but it has been demonstrating lately that it’s not afraid of change.
The Atlanta-based, stone-baked pizza brand has been rolling out new LTOs for months now—such as last May’s handheld pizza/panini mashup called the Panizzi, the Mellow Rollz in September 2025 and the Mr. Sausage Rollz in March 2026, and Boneless Wings in January of this year—and recently began piloting a variety of new sandwiches in select markets.
Now there’s more: a new lineup of salads and a refreshed beverage program, available across all locations.
“Our goal wasn’t to reinvent these menu categories, but to refine and elevate them in ways our guests can immediately taste,” said Elizabeth Brasch, VP of marketing at Mellow Mushroom. “We’ve enhanced our salad recipes with brighter ingredients and more dynamic flavors and introduced a beverage program that brings a fresh, balanced mix of familiar favorites and new discoveries. As our guests’ preferences continue to evolve, so do we.”

The reimagined salads section is part of Mellow Mushroom’s continued menu evolution. For a protein-packed option, guests can opt to add grilled or crispy chicken to any salad. Throughout May, in celebration of the arrivals, Mellow Mushroom will offer free chicken (grilled or crispy) on any regular salad, both online and in-store across all locations.
The new salads include:
- Asian Crunch: Cucumbers, tangy peppers, pineapple, crispy onions, wontons, cilantro, lime, shredded Romaine and cabbage with creamy Asian dressing (option to add crispy Thai chili chicken)
- Apple Harvest: Apples, white cheddar, sheep’s milk feta, dried cherries, candied pecans, pepitas and shredded Romaine with balsamic vinaigrette
Behind the bar, the new cocktail menu will introduce a wide range of drinks, including (to name a few): the Moondust Margarita (Espolòn Blanco Tequila, dragonfruit, pineapple, orange bitters and lime juice); the Watermelon Zinger (Milagro Silver Tequila, Red Bull Red Edition [watermelon], lime juice and a Tajin rim); the Spicy Mango Margarita (Milagro Silver Tequila, lemon and lime juices, mango purée, jalapeño and triple sec with a Tajin rim); and the Vanilla Cream Cola (choice of Tito’s Handmade Vodka or Jack Daniel’s Whiskey, Coca-Cola, vanilla syrup and topped with creamy cold foam.)
New shots include the Green Tea (Jameson Irish Whiskey, lemon and lime juices, Sprite and peach schnapps); the Triple Gummy (Deep Eddy Vodka, lemon and lime juices, pomegranate and peach schnapps); and the Pineapple Cake (Espolòn Blanco Tequila, pineapple, vanilla and pomegranate).
