As pizza advocates and pizza lovers, we keep a close watch on the pizza industry. Hundreds of pizzerias open every year, which means every new pizzeria operator needs to do something unique if they want to catch the eye of the passerby.
Big or small, here are three new pizzerias that caught our attention recently. They all made headlines because they’re trying new things or taking bold steps to grow their brand.

Triple Beam, Los Angeles
Nancy Silverton has teamed up with longtime collaborator Matt Molina to open Triple Beam, a fast casual Roman-style pizzeria in Los Angeles, where they’re cutting and serving pizza by the ounce, according to Eater LA. Additional restaurant offerings will arrive in the spring or summer, but for now, it’s all about the pizza.

Topeka Pizza, Topeka City, Kansas
This pizzeria says that it’s “Home of the Sheet Pizza” and offers the choice of half, whole and sheet-size Buffalo, NY-style pizza for delivery or takeout. It even boasts a drive-through window. We love how they refer to pizza makers as “pizza manufacturers” and “pizza builders” in their job postings. The customers apparently like what they’re serving up—they already have a five-star rating with 58 reviews on Facebook.

Sorbillo NYC
Gino Sorbillo may have just opened his first NYC pizzeria in November, but he’s already talking worldwide expansion, according to Eater.com. He’s partnered with entrepreneur Shintaru Akatsu, with plans to expand his brand with a second outpost in New York, and additional pizzerias in Miami, LA and Tokyo.
