Dear PMQ,

I really appreciate your reply on my post (from PMQ.com’s Think Tank).  I just purchased an existing pizza parlor that has been around for 44 years.  I don't know much about pizza recipes and would like to hire someone to develop four to six gourmet pizzas with a new crust.  Can you put me in contact with your resource for gourmet pizzas? The website (www.pmq.com) is amazing and full of information that I utilize everyday.  I need to subscribe to your magazine!  Thanks for your help.

Hey John. Thanks for the great compliments. As far as developing recipes, there are a few things you can do. First, hop into PMQ.com’s Recipe Bank online at www.pmq.com and search through some of the great recipes there. Many are award-winning recipes from various contest we have been involved with for the past few years. If you can’t find the perfect recipe there, quiz the thousands of daily visitors in PMQ.com’s Think Tank…I am sure this great group of operators can offer some tips, advice and recipes. If you still need assistance, email me at tom@pmq.com and I can give you some contact info for some consultants/chefs like Ed LaDou, Peter Reinhart and others. Good luck and keep us informed as to how it goes.

I will be contacting you soon about what you are doing in Austria. I think our American counterparts could really benefit from reading and seeing what you are doing. I am curious how you go about finding pizzerias to talk about. I have been a subscriber for sometime now and there are always interesting stories in PMQ. We are a small indy and growing. We are Chandler Brothers Pizza Man in South Central Illinois (We are Dennis, Jeff and Scott). I am in charge of marketing and I believe (being in PMQ’s Pizza Magazine) would be a great. If there is some sort of protocol, let me know.

There are several ways I get story leads. The first is through emails and letters just like this one. We also meet operators at the PMQ Pizza Shows and learn what they are doing just by chatting in the isles of the show. We also have advertisers who work closely with successful shops and give us the scoop on those who are leading the pack. I would be interested in learning more about Chandler Brothers.
