Ingredients:

1 12” round pizza dough, pre-sheeted

¼ oz. fresh basil

¼ oz. fresh oregano

1 shallot

1 clove garlic

½ c. extra-virgin olive oil

1 ice cube

¾ lb. Certified Angus Beef sirloin steak

Salt and pepper to taste

3 peaches, sliced thin

½ lb. smoked mozzarella, shredded

½ lb. scallions, sliced thin

Directions:

Place dough on parchment-lined sheet pan. Create pesto by mixing basil, oregano, shallot, garlic, oil and ice cube in a blender until fully combined. Season steak with salt and pepper and grill 1 minute on each side. Remove steak from heat and let sit for 5 minutes. Slice thin against the grain. Top pizza with pesto, peaches, steak and mozzarella. Bake in a 350°F oven for 8 to 10 minutes, or until golden brown. Garnish with scallions, cut into wedges and serve. Makes 1 12” pizza.
