With their surge in popularity, Pentallect projects that independent restaurants will grow at a rate of 4-5% per year through the rest of the decade, nearly doubling the predicted 2-3% growth rate of chains.

Pizzeria Locale Moves to Head of the Class

Pizzeria Locale could teach other pizzerias a thing or two about generating publicity with pizza-making classes. The small chain, with stores in Denver, Cincinnati and Kansas City, Kansas, racked up coverage in two media outlets in one week, thanks to its “Dough from Scratch” classes for locals. One class, taught to children undergoing therapy for developmental delays and autism, landed Pizzeria Locale in a two-minute segment on local TV station Fox4KC.
